• Membantu Executive Chef dalam mengelola operasional harian area pastry dan bakery.
• Mengawasi proses produksi pastry, bakery, cake, dessert, dan produk pendukung lainnya.
• Memastikan seluruh produk memenuhi standar kualitas, rasa, tekstur, presentasi, dan konsistensi.
• Mengontrol proses persiapan, produksi, penyimpanan, dan distribusi produk.
• Memastikan seluruh resep dan SOP dijalankan dengan baik oleh tim.
• Membantu mengembangkan menu baru, seasonal products, dan inovasi produk pastry & bakery.
• Melakukan trial recipe dan evaluasi kualitas produk.
• Mengikuti tren industri pastry, bakery, dan dessert untuk meningkatkan daya saing brand.
• Mengontrol penggunaan bahan baku dan meminimalkan waste.
• Melakukan stock monitoring dan inventory control.
• Membantu pengelolaan food cost dan production cost agar sesuai target perusahaan.
• Berkoordinasi dengan tim purchasing terkait kebutuhan bahan baku.
